If your cooking fish with the skin on, you can just leave them on low, skin-side down. Mop them with a 50/50 mixture of maple syrup and soy sauce and you'll get some really nice fish.

Grill hamburgers "basically, until the meat isn't pink anymore inside. And burgers should always be cooked to medium." If the meat "isn't pink anymore inside" then you're not cooking to medium - you're cooking to well done. Also, whether you're grilling steaks, chicken, burgers, or fish, the more frequently you flip the meat, the juicier it will be. Heat drives juices away, up towards the top side of the meat. If you see juices pooling, you've gone too long without flipping.
